the best slow cooker chicken recipe

Happy Monday, friends!  Mondays are usually chaotic at the Guidry residence so I try to save time with cooking a one-pot meal.  I am always on the hunt for delicious, easy and healthy slow cooker recipes.  There are so many different recipes out there but a lot of them have too many ingredients, are not the healthiest or were just not tasty enough for my little Cajun family.

A sweet friend sent this recipe to me last year and it usually makes it into our weekly dinner rotation.   We've had it with soft tortillas, traditional taco shells, over a salad, and even over potatoes. My favorite way to eat this dish is with sliced avocados!  It was a hit with my hubby and our picky little eater.  Three ingredients, one slow cooker and voila! 

3 Ingredients: (serves 10-12)

6-8 boneless, skinless chicken breasts
24 to 32 ounces of salsa (use 32 ounces if you have 8 breasts)
1 packet of taco seasoning 




I start off by cutting the chicken breasts into halves.  I like to season the chicken with salt, pepper, garlic powder, and Slap Ya Mama Cajun Seasoning.  Put all 3 ingredients into the slow cooker and stir. 





Cook:

Low for 7-8 hours or High for 5-6

When the chicken is ready, it will fall apart easily with a fork.
